摘要:本研究解析了川渝地区定型包装榨菜和工厂半成品榨菜中的主要营养物质含量,为人们科学认识榨菜营养价值,合理消费榨菜提供依据。结果表明:榨菜脂肪含量多在1.0 g/100 g 以下,定型包装榨菜的脂肪含量高于工厂半成品榨菜。定型包装榨菜与工厂半成品榨菜的粗蛋白含量相接近,多在3.0 g/100 g以下。川渝地区榨菜中钙、铁、锌、硒、镁元素含量范围分别为:460~1 500 mg/kg、10.3~105 mg/kg、1.2~6.2 mg/kg、0.04~0.12 mg/kg、31.8~336 mg/kg,大部分样品中未检出铜元素。川渝榨菜中未检测出维生素 C,其维生素 B1、B2和 B6含量范围分别为0.005 2~0.458 0 mg/100g、0.011 0~0.052 5 mg/100 g、0.011 5~0.090 7 mg/100 g。 榨菜的总膳食纤维的含量为5.77~18.62 g/100 g,定形包装榨菜的膳食纤维含量较半成品榨菜明显偏高。川渝地区榨菜是一种低热量低蛋白,富含膳食纤维、硒元素的食品,还含有少量的B族维生素。

Analysis of Main Nutrients in Pickled Mustard in Sichuan and Chongqing

Abstract:This study analyzed the main nutritional components in packaged mustard tuber and factory semi-finished mustard tuber from Sichuan and Chongqing area, so as to provide the basis for scientific understanding of the nutritional value of mustard tuber and reasonable consumption of mustard tuber. The results revealed that the fat contents of Zhacai were mostly below 1.0 g/100 g. Fat content of packaged mustard tuber was higher than factory semi-finished mustard tuber. Contents of crude protein were similar between packaged mustard tuber and factory semi-finished mustard tuber, mostly lower than 3.0 g/100 g. Content ranges of calcium, iron, zinc, selenium and magnesium in Zhacai were 460~1 500 mg/kg、10.3~105 mg/kg、1.2~6.2 mg/kg、0.04~0.12 mg/kg、31.8~336 mg/kg, respectively. Copper was not detected from Zhacai in most samples. Vitamin C was not detected in Zhacai and contents of vitamin B1, B2 and B6 were 0.005 2~0.458 0 mg/100 g, 0.011 0~0.052 5 mg/100 g, 0.011 5~0.090 7 mg/100 g, respectively. The total dietary fiber content was 5.77~18.62 g/100 g and packaged mustard tuber was higher than factory semi-finished mustard tuber on total dietary fiber. Zhacai in Sichuan and Chongqing is a low- protein and low-fat food contains little amount of B vitamins. It is also a good source of selenium and dietary fiber.
